In May 2008, having completed the Camino, and before starting out to Finisterre, I rested few days, mostly spent in Museums, the cathedral and places where you could dodge the incessant rain. I stumbled across a very welcoming establishment by the name of Rias Baixas, Meson Parrillada on C/Galeras 30. A right turn at the bottom of the steep hill down from the main cathedral sqare on the way to Finisterre. White table cloths, freshly cooked chips, lovely hot scrumptious soups, the Vino de la Casa(red) was the best I had on all the journey. All local cuisine & a choice of 3 different menus. All for 7.5 euros for the 3 courses. With a view looking up to the Cathedral. However, if you want your coffee hot ask for it muy caliente!

I am glad you found a place you liked.

Usually the best places are those a bit away from the "tourist traps". Around Rua do Franco (the street from the park down to the cathedral) there are restaurants one after the other, but I find them a bit pricey.

The ones a bit away from the crowds have to compete in price and quality to be able to stay in business.

I read somewhere this week, that in Spain there are 1 restaurant/bar for every 130 person, so there should be enough places to choose from (Spain has about 40 million inhabitants).
